So I don't have the tools, the facility, or the patience to do this myself. How long should it take the shop to install my Nichols flywheel for me?
Depends on the shop and the person doing the replacement. The actual job can be done relatively fast. Maybe a couple hours or less. Depends on how busy they are and how fast the guy doing the job is.
I'm a mediocre mechanic, and that job would take me 2 hrs.

I know it's not a big job but I have seen guys who really know what they are doing but they just work slow. Not everyone is fast. I can tear my bike down top to bottom in under an hour by myself if I want to but not everyone works that fast even at the shop.
Edit: putting it back together would take significantly longer though. ;D
1 hour should do it on an air cooled monster.
now if you have so much bling on the bike you cannot see the side cover all bets are off.

I'm interested in this mod also. Anyone have a good reference for how to do it? I have a 2008 695.
