I need to do an oil change on my new 2003 M620, what oil and filter should I use?

From my learning this week, stay away from car oil. Being that your bike has a wet clutch it won't appreciate the "friction inhibitors"
It will cause the clutch to slip.
Just try doing a search. Also this and your other question should probably be in Tech. Your going to get 100 different reponses from 100 different people. There are a few threads on both of the subjects out there.
I just had the 6k service done by J.D. Hord in Bucyrus (who works on a LOT of Ducs and races) and he put non-synthetic in my bike. I've been using Mobile One and by the way he tells it he sees Mobile One creating deposits most of the time. I'm going to go with the non-synthetic for now and see how she rides. A lot of people on here use Motul or many other types of oils. Just makes sure it is Moto specific.
I go to my local auto parts store and order whatever of the following I can get the cheapest for my M750 (seems most Ducati filters are the same) from my searching.
* AMSOil SMF 132/132C
* EMGO 10-26980
* Fram PH6019, PH6074
* K&N KN-153
* NAPA 7013
* WIX 57013
I've been putting Mobile1 Devlac in my M750 for quite some time and it seems to work well. It's got 31,000+ miles and runs very well. I pay about $11/gallon for it.

I just filled my 03 620 with Mobil 1 Racing synth motorcycle oil with a K&N filter, pricey, and maybe over the top, but nothings too good for Celeste, my hot red head sweetie!
I run Motul 10w40 semi-synth and a Ducati filter
