We're going for "all pork, all the time" today.

Got up at 0-dark-thirty to put ribs and a pork shoulder on the smoker after they sat in their rubs overnight, then came inside for (wait for it...) BACON!

Tended the smoker off and on until just after the Memorial Day parade, then had ribs for lunch. My 13 y/o made his signature cornbread and now we're all sticky with watermelon juice and rib gunk. My wife actually crashed in the library from what she is calling "pork toxicity." Lightweight.

In a couple of hours I'll be getting the shoulder off the smoker - it will likely be in several pieces by then - then pull it. The 'tater salad will be ready but still warm by then and the kid'll grill a few ears of corn to go with it. I made the sauce yesterday and we've got the requisite smooshy white-bread buns (for which otherwise there is essentially no use) for the pulled pork.

My former colleagues in Texas and fellow Aggies may grumble that BBQ is properly brisket or beef ribs, and they'd usually be right. However, I think that just as was said about beer by Ben Franklin, the pig when properly prepared is proof that God loves us and wants us to be happy.

God bless America and the memory of all those who gave up BBQ forever so we can enjoy our pig or tofu however we like it!

Maybe I should have gone with tofu after all. The three of us are sitting around looking stunned (or is it stoned?). I can practically hear my left anterior descending screaming in protest!

I must say that it was pretty good shoulder, though, even if a few bites put my porkometer readings off the scale.

I just researched where the F to buy a fresh suckling pig.....wifes away til Wednesday and Im hankering to cook one up!  mmmmmm pigggggg!

I feel ya man...my b-day party (May 12) I smoked a pork butt N.C. style but then also made a Balinesian pork shoulder with indirect heat...OMG it was sooo good!  PM if you want the recipe.
