At one point, he was putting clay on the piston crowns, that's to check for piston to valve clearance.
Typically done when you fit high-comp pistons, or aftermarket ones, just to make *absolutely* sure there's no interference.
Also done if you're changing cam timing in a way that may have the valves closer to the pistons.
I'm pretty sure when he had the dial indicator installed, he was degreeing the cams.

Looking at the way he tightened the cam caps in the first few seconds, he's not an Alfa mechanic.
