The past week or so there's been a squeak coming from under me. At first I thought it was the shock, but when I got under there it seems that it's coming from the U shaped thing in the pics below. I touched it, while bouncing the bike and I could feel it. How would I go about lubing this?

That's the suspension linkange - or "hoop" on -01 and older Monsters. Where is the squeak coming from? The eyebolts at the swingarm or at the long pivot bolt at the top? Removing the U-bolt is a bit tricky. Your manual will tell you what you use grease on and what you do not.
I'm having a hard time telling where exactly. I can kinda feel it when I wrap my hand round the right side that goes down. The manual is an issue, my bike didn't come with one.

any pre-02 manual will have the suspension info you be lookin' for.
I found a 2000 M900 service manual, it says to use "AGIP GR MU3". Where would I find this grease? I did a quick google search and all that came up was a lot of manuals.
don't worry about that specific grease - you're going to have a lot of trouble finding agip in the US (and even in many other countries).
You can, as an alternative, squirt a bit o' chain lube in the part you think is squeaking.

Sounds like very good advice right there.
Sometimes...as the rubber bumpers on the seat compress the suspension rocker will rub on the seat pan.
It will also happen if you use a Corbin seat.
Mine squeak too, but it is the upper edge of the sidepanels rubbing against the Sergeant seat.
I squirted a little bit of chain lube in there and that seems to have done the trick.
