Just wondering if a 749 wheel is interchangeable with a 748 wheel. I have SBK forks on my monster and wanted to know if the bearing sizes are the same between the 748 and 749.

Bearing size might be the same. The rotor offset is different however. (IIRC)

As well as the number of bolts attaching the rotor.
The 749 only has 5.
I have 999 forks on my 748. To do so I used a stock 748 axle and spacer, I did have to space the calipers in 5mm per side to make up for the offset difference. You could also use 748R rotors to get the 748 hub mouting with the 749 rotor offset. I would have done that if my front end was radial, which would have made spacing the calipers impractical.
748 rotor offset = zero
749 rotor offset = 5mm
I thought it was 10mm vs 15mm of offset, but it has a been a while. Either way the 748R and I think there was a 996R or perhaps 998R that used the 15mm offset as well.

you're probably right... all i know is the 999/749 is 5mm more
