When accelerating from a low to mid-rpm my carbs sometimes coughs and spit a bit, it also seems to be running rich. It doesn't happen when in higher rpms. From the research I could find, it seems that I probably have worn jets in the carbs and need new ones. I have a '97 M750, pretty much stock except for the Feracci exhaust. Any recommendations on a jet kit for it? What should I expect to pay to have it installed? I think it's a bit above my mechanical knowledge.
You may have worn needle jets, which do not come in jet kits. You might want to a stage i jet kit if it has not been done already or a stage 2 if you decide to open the air box while you are at it. Another possibility is you are due for service and new plugs, valve adjustment, throttle synch etc will set you up just fine.

I've found jet kits online, but I'm having trouble finding the needle jets, any recommendations?. I was looking at a DynoJet Stage-2 kit. Is this a decent kit?

Factory Pro has needle jets.
I bought a Dyno-Jet kit and OEM needle jets.
The Factory Pro kit comes with needles and jets, which are a major improvement over the stock Mikuni parts. My brother has my factory pro jetted M900 carbs on his M750 with an Arrow exhaust and that bike will run.
I replaced my spark plugs and fuel filter and the cough/spitting seems to have gone way down. I think it did it twice in the past 4 days.

Did you buy a jet kit yet?
This kind of sounds like the problem I was having last year with my bike. It would cough and backfire and the plugs were fouling out every few hundred miles. I had the typical worn needle jets, and I also found a 170 main jet in the carbs :o A Facory Pro jet kit and new OEM needle jets fixed me right up.
