Her business is finally almost open! We're hosting an open kitchen today for the clients and permits barring, she should be open in a couple of weeks.
I made a model of the space with all the equipment that it will have and Desmolu made an awesome video showcasing it.

oh my! I've been so busy I haven't been on the Board in weeks (although my boy keeps me updated regularly on what you crazy kids are up to) but since El Mat mentioned he posted my video and you guys were all chiming in to say nice encouraging things, I wanted to swing by and say thanks and that I miss you!!
Hopefully my new career as a web designer for my business as of late will die down and I'll spend my time in front of the computer doing more productive things like posting here ;)
thanks so much for your encouragement! Its been a 2+ year process getting this thing up and running so its crazy exciting that its finally all coming together ;D
and to answer your questions, grease isn't a problem because I have a huuuuuge grease trap and the Cold Kitchen is for finishing well, whatever your making (if you might need it, you'll know what it is) - mostly packaging and labeling, assembly of finished product, that sort of thing. So much involved to making food beyond actually cooking it with all the crazy regulations!

I've already overnighted a few of my baked goods in trade for cigars [evil]
Menus will start to trickle in in the next month or so as things start to get established. I'll post up! Lots of yumminess. But I'm always up for barter baking!
