Title: The Food Coma

Last nite I had the finest meal of my life.....maybe because it was was with my best friends I am not sure. Anyway we all met at my friends home and I bought a bottle of white wine along.... There was good scotch available but I decided that a 2008 Sokkol Blosser was more appropriate for this fine fare.It was...........drum roll please............the most amazing meal ever. Salad, warmed baguettes with plenty of butter and then the most wonderful thing ever...............

OMG......... unbelevable. worthy of a bacon related posting here. So two helpings later and a glass of wine I went home and fell into what can only be described as a food coma. I slept for almost 7 hours straight! This meal although simple tasted fan-bloody-tatstic.
Angel hair pasta and a can of tomato sauce. Add to it a packet of bacon cooked and cut up into small pieces, dump in the bacon, grease, everything and let cook for a bit. Bloody Brilliant!!
Bacon spaghetti is gonna be my downfall..........saddlebags, kankles, and a belly are just over the horizon! [bang]

Has anyone else ever had this or heard of it? I am 47 and it was a new one on me! Most excellent food ever.         b

Beware of an impending food coma if you decide to have it.......

Oh and before I go if there are leftovers in the am, I reckon reheated with a couple of fried eggs over easy on the top would be a great way to take a nap at 8 am........ [laugh]

You were what?  :o

To begin with it sounded like Carbonara, but then you added the tomato sauce instead.
I'll try that some time  [thumbsup]

I was also puzzled by the white wine at first, but since red is difficult to match with tomato, it might be
a better idea to go white.

Thanks for the inspiration - that will really help my minus 25lbs project  [bang]

The white wine was for my friend as that is what she prefers to drink and she offered me a glass......

Yes bacon spaghetti will help anyone lose 25lbs-NOT!!  [laugh]

Watch the food coma's.  Its was one of the indicators that I had diabetes.  Especially after a big pile of simple carbs.  Might not hurt to have a diabetic friend poke your finger and get a look at your sugar levels.

Yummmmm...I love me some carbonara with good and/or pancetta in it!!

BGB - having truly great meals ith people you love is the best thing in life. I have memories of maybe a dozen meals I ill never forget. and another 20 dishes that ill make me nostalgic whenever I eat them. Life at those moments is truly at it's best. I'm very happy for you.

Never had a full on bacon pasta dish. But the best carbonara I've ever had (he says very immodestly) is the stuff I figured out how to make after hearing some old Italian guy on TV insist that carbonara should only have four ingredients. which are:

Pancetta (cut in small cubes)
50/50 mix Parmigiano-Reggiano and Pecorino Romano (grated finely)
Eggs
Black pepper (freshly cracked)

The following can be done as your pasta ater heats up and your pasta cooks:

Sear the pancetta over high heat. hen the pancetta is done I shut off the heat and deglaze the pan with a bit of white wine and shake the pancetta around to coat it with the glaze.

Gently beat a couple of eggs until smooth. whisk in the cheese until it forms a paste. This will be a lot of cheese.

when the pasta is done tong it into a separate pan over low heat and reserve the pasta water. Ladle a small amount of the past water into the bowl with the cheese/egg mixture and whisk until smooth. Pour that on the pasta along with the pancetta and stir. Add pasta water as needed to create the proper texture. Crack black pepper over the pasta and continue stirring.

Do this and you won't have to add cream or butter or any of the other things people use to fake the creamy texture of carbonara. These things dilute the taste. Garlic is unnecessary.

I should note that this will not turn out the first time you try it. It takes a bit of finesse to get the texture of the sauce correct. The proper heat and proper amount of water are needed. But after you do it a few times it is fast and easy. And wonderful.

I've said it before, and I'll say it again, Pancetta and Prosciutto are like Bacon's totally hot Italian cousins

Thanks Sac, I am gonna use the above recipe very soon, substituting Bacon for Ms. Pancetta.
