...,I guess the other ones are riding mopeds.

Apparently he's a British national champion.

I wonder how 'stock' his bike is; I guess pretty standard as the ducati challenge doesn't allow a lot of changes except for suspension internals.

He seems to be breaking pretty deep into those corners, really skilled guy bet he was having a blast though.

Yes  ;D
At least, it is on my 1098. Happens when I get up in the rev range - there's more of a top end rush with the Testa Evo motors than older Duc motors I've been exposed to.

That rider is really impressive. What I noticed most was how smooth he is. I doubt he's even at a 90% pace (for him) in this video.

Rumblestrips (or other bumps), headshake, and wheelies can cause the bars to flop around a bit.

Yup, awesome throttle control. I dont think he ever as much as missed a blip.
