What are the drawbacks of not having an exhaust? Please excuse my lack of knowledge on bikes. Thank you.

If it's just removing the slip-ons - then you'd need to have some sort of baffles created that would reduce the level of sound. Though, I have serious doubts that you could ever get the volume level down to stock if you removed the cans and installed some baffles. I'm not sure of the newer bikes cans, but older monsters have piping that came from the header and then pulled two U-turns inside the can, before the exit. All that greatly reduced the sound level at the exhaust exit, and there's probably something similar in the new style exhaust cans. So part of the way to reduce the sound was to lengthen the tube in which the exhaust and accompanying noise traveled. Also there were perforations and sound absorbing packing as well. Removing length and the ability to have sound absorbing materials... not going to be good for your goals. If you're just removing the slip-on cans then there's probably little to no real drawbacks you'll encounter - beyond it getting LOUD. If one has an exhaust that it too short it can cause rough running due to too little back pressure. Folks have player around with running sans slip-ons one both DSS (900, 620, etc) and SSS (S*R) monsters in the past. Generally folks didn't like the results in the long run. Mixed reports of it effecting running condition, but mostly it cam to the sound. Without something, you get a bit too much of the older-car-that's-got-a-rusted-through-exhaust sound. At least that's what my 900 sounded like when I fired it up sans cans one time. So, yeah.. I'm not sure there's a cost effective way to reach your goal. I could be wrong, and there are ways to do it.
