I'm planning to combine a head check, repair and paint (hate my air leak and not knowing why it's there)
Do I need to remove the throttle bodies completely?
(I understand about the exhaust and oil cooler)
Maybe a good idea to take off the cylinder and piston too?
If the base joint doesn't move... leave it.
Otherwise, be really careful of the oil ring. ;D
No, you don't have to remove the throttle bodies, just disconnect from the manifolds and get it out of the way.
Really *try* to not break the seal between the cylinder and case...
Gently pry between the head and cylinder to get the head off, etc.
Don't turn the crank unless you restrain the cylinder... strangely enough 2 piston pins and 2 head nuts work perfectly.
I wouldn't take the cylinder and piston off unless you see something suspicious when the head's off.

Won't the manifold studs prevent a simple slide?
I've been advised to cover the piston with oil, to see if that stops the leak. If it does, the leak is through the cylinder/piston. Opinion?

If a generous coating of oil improves the leakdown test significantly then I'd lean towards rings as the issue also.

BTW: how the hell will I get a generous coating in there? Raise the bike to vertical? Spray oil - how?

I'd squirt it in there through the plug hole and the throttle body then turn the motor over under compression (spark plug installed) with the starter.
Remove plug and test.

Spark plug installed, but not connected I assume ;D
