I plan on replacing the camshaft cover and valve cover gaskets because I didn't do it when I did my valve adjustment and they are now leaking. If I remove said covers, which ones will pour oil all over me, which ones will trickle it on me, and which ones won't leak at all.
My thinking is as follows:
Horizontal cylinder exhaust valve: A fair trickle
Everything else: Nothing
Am I right?
Yeah, pretty much. I just use a rag to catch what comes out of the horiz exhaust cover... It's not much at all...

The new stamped steel gaskets seem to be very tolerant of re-use, just wipe 'em off and reinstall.
I wedge a rag below the vertical exhaust cover when I remove them, just because it's a pain to clean that area and they'll occasionally drool a bit.
Old old bump but wanted to know if this is true of the DS1000 engine.
Im replacing the Camshaft Bearing Cover Oring and Gasket as Im getting a small drop of oil leaking from both the horizontal and vertical.
Shouldnt have to drain the oil to do this right?

No need to drain the oil to do that.
There are different o-ring configurations depending on what year DS it is, so it's worth making sure that you're getting the proper stuff.
