So I have a 2001 M750 that I got awhile back. Just got it fired up for the springtime, but noticed some interesting issues.
I have read on here that the idle screw should be set around 3.5 to 4 turns out, but I have mine out all the way at 9 turns out. Here are the things I found modified on the bike:
-Airbox is open
-two k&n pod air filters on stock Mikuni carbs
-hotter coils and spark
-after market exhaust
-17000 miles on it
Now I don't know what jet is in the carb just yet, but Im sure ill be diggin into that soon.
The bike sometimes will backfire, but not as bad as when I first got it. Also, if its a cold start, sometimes it will fire back through the carbs. Throttle seems to hang a little bit after backing off revving it.
Do you guys think this is just a simple carb needs cleaning and sync issue? My guess is its got all the mods, but not the right jet.
Let me know what you think,
-Al
Sounds like it was never jetted correctly.
I'd get a jet kit. I like K&N, others like FactoryPro. The FactoryPro needle jets are better. I like the Dyno Jet needles and springs. Your choice.
The throttle hanging is due to the idle being too high or poor synch, or both.
I had Dyno Jet needles and springs with Factory Pro jets in mine with a stage 2 Dyno Jet jet kit, open air box. Good combo. Unfortunately you need to find out what is in those carbs.
Here is an interesting thread about those carburetors.

It is worth reading to gain some knowledge before you begin. Not specific to your problem, but worthwhile.

Put a jet kit for an open airbox through it. Maybe new needle jets from Factory Pro and a stage 2 Dynojet kit as some have suggested and set it up as per the instructions.
The intake mods to the bike require a jet kit more than say slip on exhausts.
I'll add that a good carb service after that time and mileage is a good idea, so tune and synch with the jet kit and needle jets. It will make a difference.
