My buddy gave me 4l of motul 7100 synthetic 10w60 oil.
I wanted to use it for my oil change but the manual specifies 10w40, would it be safe?

I wouldn't.
Not only will it reduce power, it could cause problems for the plain bearings of the camshaft.

MV uses it in the F4 and is an alternative to F3 or 3 cyl engines that recommend 10w40 or 15w50

Well son of a blank blanking blank. I've noticed a definite decrease in the buttdyno for my 1098 lately (year), and couldn't figure it out - sounds fine, oil was changed last year, everything normal except for some power loss. Guess which Motul viscosity I switched to? Insult to injury, I got tired of using different viscs for both bikes, so I threw it in the 750 too. Can't tell if there's a hp loss on that thing.

Best oil I ran in my S2R800 was Amsoil. Mobile 1 Racing 4T being a close second. Anything else and I'd have trouble with my clutch plates sticking at start up. It is especially important on your wet clutch bike.
I use motul, haven't had any issues with that oil.
