Title: Had to ride through some flooded roads, oil light comes on

And stayed on for about 20 minutes.

Why do you think? The temperature came down from about 99 to 59C, but why would that trip the oil gauge? :-\

(my oil level is fine btw)

Water got in the oil pressure sending unit connector. Dry it out completely  (connector and boot) and re-check.

Also pack the connector with dielectric grease to prevent this from happening in the future.
