Recently removed rear sprocket nuts for black oxide coating, however the last bolt was a bit of a problem because as I was trying to get it off w/ socket I noticed it kept spinning and spinning but bolt nut wasn't coming off.  The reason was that the stud holding it in place was spinning w/ the nut.

I managed to get the nut off by holding the stud in place from the other side.  Is the stud gone or is this normal?

If the studs aren't tightened first, you'll get both moving.  Tighten all of the studs down and the nuts should go on with no issues.

+1 to what scott said.  Also, the last stud was spinning b/c you had released all of the others already.  I wouldn't worry bout it.
