put the gearbox in a high gear and hold the back brake

or

a piece of wood through the rear wheel against the swingarm
i dont care if you have been a mechanic for 10 years doing something for a long time does not make you good at it, take my gf for an example shes been walking for 28 years and still manages to fall over all the time.

i usually rattle gun it off with the old chain fitted and the engine in neutral holding the rear wheel with my hand, that way the old chain takes the pounding.

i refit it with the motor in first and torque it up against the compression.  if it won't hold i'd put my foot on the brake pedal too, altho it's a bit of a contortionists act on your own.
