Exhaust gasket - which way is the right way?

I am re-isntalling my exhaust with some new gaskets.  In the attached photo you can see that one side is completely flush (left gasket in photo) and one side has a groove/bump (right gasket in photo).  Which way goes toward the engine and which way goes toward the exhaust?  Thanks much!

It doesn't matter.

After you tighten the nuts for the header the gasket doesn't care...it's flat. ;)

Ah.  I was thought that washers should have the sharper side mate to the engine-side.  I was thinking something similar applied to these.
