Will the stock carb jets be good enough or will I have to upgrade them?  I know it will be running really lean after I take off the airbox and put on the pod filters.  Just wondering if I need anything else besides adjusting the carb.

I'm going to make a bold statement and definitively say that without doubt, you might want to put some new jets in  :) .  Sorry that I can't be more specific, but I'm not sure if anyone has a very definitive answer to that.  A lot of people that go to pod filters just bundle a re-jet in there, too.  I have a dynojet stage 2 kit and pod filters on my 750, and it seems to be a good combo.  On ducatisuite, he bundled a Factory Pro jet kit and pod filters together here.  There has been quite a bit of discussion of open airbox vs. pod filters, and there might be some info on those discussions.  There are also quite a few great in-depth articles on carb tuning / jetting for these bikes here: http://www.bikeboy.org/performance.html, so there might be some relevant info there as well.  If you only want to change a jet or two (maybe just change the main jet, for example), you can find Mikuni jets for in the $5-$10 per jet price range, so that might be more economical if you do end up putting some new jets in there, but the trade off is that you need to do a bit more research. That's the best advice that I can offer, good luck!

it's not so much lean as changing the upstream signal to the carbs, but it should run very badly.  as in unrideable.  the main change is to the needles and springs, often you don't change the mains that much at all.
