Disregarding rotor offset, fork offset, and other alignment measurements entirely...
What prevents a 65mm-mount, Gold Line Caliper from being used on a 300mm rotor as opposed to the typical 320mm rotor?

Only the position of the mounting lugs on the fork leg.
It would be possible to make an adapter plate to address that.

You would have to position them near-perfect, as the pad face is ~32mm, and the 300mm rotor working area is ~32mm.

4-pad caliper has a narrower ~30mm pad face, so a bit easier.

*All of this is ignoring the zero-offset of the rotors, which may have the caliper clash with the wheel.*

I would fear the 300 mm rotors being overheated.

(no idea if that would be a problem in your case)

i'm not really considering attempting this, but what got me wondering was this business here:
https://store.bevelheaven.com/new-arrivals-2012/caliper-adapter-kit-sportclassics-install-65mm-mount-4-piston-calipers/

i imagine that there is some caliper/wheel interference, thus the rotor spacers in this kit.
at this price point, i'm more inclined to just scoop up some rotors, considering i'd still have to buy the calipers anyway.
not really a cost effective solution, but good engineering i suppose.

If this is for your 800, the kit price is more than most new rotor pairs.
I don't know if the kit would even work as a way of using the non-offset stock 300 mm rotors of the 800 with 4 piston calipers....  It seems like it's made to allow upgraded calipers on a SC with spoked wheels (AFAIK the SCs must use a narrow type of floating two piston caliper, similar to the 800 design, to clear the spokes)

yea it's a really weird item. just got me curious though. i have a machine shop/operator that is essentially at my disposal, so this could be an interesting project, but the cost to do so is really prohibitive when compared to the price of a simple set of rotors...
