Easiest way to drain fuel from tank (carbie w/ vacuum petcock)

Hopefully this isn't a dumb question.  I did do a quick search and didn't see any threads that will help me.

I have a 2000 M600 (carb'd w/ vacuum petcock) and needed to a touch up to the paint job while the tank was on the bike.  Now I need to remove the tank and its critical that I don't spill any gas on the new paint job.

What is the easiest way to do this?  My though was to remove the tank completely, assuming that the vacuum petcock will keep fuel from flowing out, but then I remembered that I have the fuel sensor on the back and I cannot remember if I can disconnect that from the wire harness.

Any advice?

Yes, the fuel sensor should have a quick disconnect of some kind.
I used a fuel cut off clamp just before the pump back when I had a Monster fuel set up.
Kept a rag handy because fuel would usually exit the pump a bit.

Or I wonder if you could clamp the line to the pump and run the bike til all the gas runs out?
