I think I've figured out the center-stand problem. It was a ride height adjustment issue. Raised it a bunch and it did the same canyon at the same speed with no dragging, but I raised it too much and it handled funny. Just fine-tuning the height now.

... he rode it WAAAAAY too fast ...

Not possible.
