Possible reasons for brakes siezing at 80mph on the highway

I opened the bleeder at the caliper and it dribbled out for a minute and then stopped, then i checked the reservoir and it seemed overfilled so i pulled some of it out so it was right in between the high and the low level. brakes dont seem any different an i rode it around abit to see if i could recreate the issue and no dice

i'm hesitant to declare your problem "SOLVED!", but I am curious as to the color/clarity of your brake fluid. If its murky and gunked up, you may have some clogs floating around.

actually its perfectly clear, I had my fluids done about 3 weeks ago. Crystal Clear!

well, beyond the adjustment mentioned above by howie, you may have been overfilled.
