to me that's some funny shit.  I did much, much worse as a kid and survived.  I'm subscribing to this thread just so I can laugh.

Yea, I read it wrong...  they aged the meat like beef, cleaned and skinned to tenderize it but didn't recommend butchering it for a atleast day or two.

that sounds pretty cose to what happens here

animal is gutted on site, skinned at destination, and hung for a couple of days before boning/packing

then you spend a week hunting for ticks
