Good raceday snacks and bbq?

Hosting a small moto gp viewing and bbq at our place this weekend, and need ideas for snacks/food/bbq...


I have 3 lbs of good bacon..... lets hear some of your finger food ideas.

Bruschetta.  Get some good bread, Italian or French both work, slice at at an angle and grill just long enough to get a good toast on both sides.  Cut a head of garlic in half and scrub one side of the toasted bread with the garlic.  Arrange on platter, drizzle with good extra virgin olive oil and sprinkle with kosher salt and pepper. Turkey bacon.

No, wait, hear me out!  [/edges closer to the door while looking apprehensive]

Get some turkey coldcuts, some cream cheese, and your favorite hot sauce.
Cook the bacon until crispy, and drain well.  Cool.
Mix some hot sauce with the cream cheese, until it's tasty.
Spread that cream cheese on a turkey coldcut.  Wrap it around the bacon.  Fasten with a toothpick.  Or just eat immediately.
Repeat as needed.

See!  Turkey and bacon, coexisting peacefully.  [/nods to IZ, runs for door]

BBQ Corn Salsa

couple ripe tomatoes
sweet onion
cilantro (if you like cilantro)

some jalapenos, halved and seeded
couple ears of corn, unshucked, but with the silk removed from beneath the husks

lime juice
salt
pepper

Dice the tomato and onion and cilantro, and toss in a bowl.

Grill the jalapenos briefly, untl scorched but not too soft.  Dice finely and add to the bowl.

Grill the corn until fully cooked and darkened.  You're looking for carmelized, but not burned, here.

Cool the corn, husk it, and slice the kernels off the cob.  Add the corn to the bowl.  Stir everything.

Add lime juice, salt, and pepper to taste.  Add fresh jalapeno to increase heat, if required.

Grab beer and chips!

I'd help more, but all I know how to do is eat them. ;D

Pinwheels - put various foods in tortilla wraps, slice 3/4" thick and lay flat on a platter.  Here's some suggestions:

cream cheese, sweet lebanon bologna
chicken salad, lettuce
tuna salad, cheddar cheese
turkey, orange cheese
cream cheese, taco seasoning, tomato (washed well)

Think visually.  You should be able to see the lettuce swirl through the chicken salad.  Need something wet to hold it together.  Use your imagination!!!

Chicken Wrapped Bacon Thingys Recipe

Boneless Skinless Chicken Breasts
Bacon

1/2 cup brown sugar (approx)
2 tablespoons chili powder(approx)
1/8 teaspoon cayenne pepper (approx)

Cut chicken into bite size pieces.  Wrap in bacon, secure with a toothpick. 

Mix brown sugar, chili powder and cayenne together.  It's not an exact measurement - I do it by sight and scent. 

Roll the chicken wrapped in bacon in the rub, coating liberally.  Place in an oven safe dish.  Bake at 350 for 30-45 mins.

Essentially, the brown sugar mixture mixes with the fat of  the bacon and makes a yummy sticky bbq glaze.

Quick tip:  Make sure your chicken is dry...if you have too much chicken juice on it when you roll it in the brown sugar mix, it gets too runny and the glaze slides right off.  Paper towels work great!   [thumbsup]

Bacon wrapped stuffed shrimp skewers...

Soak a package of bamboo skewers in water for a couple of hours.

Take large uncooked peeled and deveined shrimp, thawed and cut a "pocket" from the head end towards the tail.

Take a small piece of pepper jack cheese and stuff it into the shrimp.

Wrap with smoked bacon and place on skewer.

put about 6 per skewer.

Grill over medium flame flipping about half way through until the shrimp is no longer translucent.

Eat and enjoy.
