I was getting ready to change my oil when I read in the manual that the oil should be changed at 600, 7500, etc. I have a 2007 GT1000. Oil was changed at 600. Previous owner had a 7500 mile service done at 2000, including oil change (verified with dealer, they did it, know the owner). I bought at 3000 miles and it just turned 5000.

Is it safe to wait til 7500?

I just change it once a year at least, if not every 3000ish miles.  It'll never hurt your engine to have the oil changed on a regular basis.  Gets out all the crap that the old oil picks up, lets you see if any weird random metal bits are floating around in there, etc etc.  Not to mention that if you are putting it away for the winter, it's nice to not have all the old oil's dirt sitting in the engine for a long period of time.

Just go ahead and change it, it'll never hurt the bike to have fresh stuff inside, only help.

booger

Remember your engine and clutch share the oil supply, so on a wet clutch bike you should really be changing the oil at 3k miles since not only will it get dirty from combustion byproducts but it will be contaminated with abrasive friction material from the clutch as well.
