Knee protection: Icon Forcefield Knee/Shin guards. Always on when I'm riding.
Underneath: Minus 33 Expedition weight thermals and Knox Cold Killer windproof jacket/pants when it's chilly. Alpaca Knee length socks.
Wear earplugs?: Any ride over 30 mins or so.
Accessories: Same shitty Outdoor Products backpack I've had since high school. Windproof balaclava, breath/fog mask and glove liners for really cold days. Cheap Sunglasses from Walgreens.

Accessories (backpacks, sunglasses, foggy respro, etc.): I ride with smoked visor on sunny days. Cloudy, use clear and bring some shades just in case.
