I'm swapping my stock footpegs out for Rizoma ones. What is the best way to remove the clip that holds the footpeg in without destroying it?

Are you talking about the circlip? Just get a set of needle nose pliers and "push" it off. It's really easier than you think...

I usually get a small flat head screwdriver that'll fit in the space provided and just give a gentle 1/4 - 1/2 turn and that usually does the trick too

That's a really easy way to do it.  You then jsut need to tap out the pin with a drift or even just a small screw driver.  Just watch for the spring that holds the peg down.  It shouldn't fly out, but strange things can happen.

If you're doing the passenger pegs - there is a tiny spring that pushes on two ball bearings that act as detents - that spring loves to shoot out when you pull the peg.  So if you're doing the passenger ones, remove the peg slowly and keep your hands cupped around the sides - that sould prevent stuff from wandering off.

Otherwise, sometimes they go 'ping', and disappear.  Angry
Or they'll try to put your eye out, or they'll hide where you can barely see 'em, but have to spend half an hour retrieving them.

Yeah, that bit of advice came a tad bit too late.  bang head   I so wonder how it's going to cost me...

My favorites are the wrist pin clips.  Designed by the devil.
