Im gonna derby on this one.
the surface of the oven is what is giving you a bad read.
Rattle can it black with hig temp and BAM you just kicked it up a notch

go flat black not a gloss black should have put that in there as well.

Is the outside of the oven reflective?  As in stainless steel or a glossy finish?  That will skew the readings all to hell.  Put a piece of masking tape or something on the door and check that.

with white protective vinyl....120degrees....
with black spray paint...185degrees!!!!
