Hmm....twice baked potato with prosciutto and aged Cheddar? That would be tasty.

2 turkeys currently being brined in in leek, onion, carrot, celery, assorted herbs & spices
then draping with Bacon, making a bloody mary @ 4am tomorrow, putting em on the smoker with applewood pellets
stuffing (cornbread, sausage, shrooms, etc)
honey baked ham (aunt is bringing)
roasted garlic mashed potatoes
gravy from bacon/turkey drippings
green beans with almonds (sister-in-law making)
leek bread pudding (my mom is bringing)
sweet potato souffle (buddy is bringing)
port cranberry sauce (wife tested yesterday, and finally admits she likes mine better than canned)
crescent rolls
pumpkin chiffon pies
another dessert TBD
assorted gin fizzes, bloody marys, wines, whiskyies, beers

Already had one Turkey day this Sunday passed.

Soaked turkey for 10 hrs. in brine and sugar.  Then cooked inside plastic cooking bag with onion, celery etc. stuffed into the bird and in the pan and one pound of thick sliced bacon wrapped over the breast of the bird.  MMmmm bacon.

Gravy from pan drippings and sieved veggies, turkey/chicken stock, flour and butter roux.  Most excellent!
Pumpkin pie,
Big pot of collard greens cooked in chicken stock with country ham in em,
Buttermilk biscuits and cheese bread,
Spicy sage and sausage dressing,
Baked ham,
Corn off the cob cooked in chicken stock and seasoned with salt pork,
Green beans

Pina coladas or Hot buttered rum from fresh squeezed apple cider.

Going to another turkey day tomorrow at Mom's. Get to eat somebody else's cook'n this time.

Brined turkey, roasted with stuffing
Stuffing will be homemade bread, sausage, mushrooms, apples, onions, and celery
Green beans, whole with fresh mint, olive oil, and sea salt
Brussel sprouts thinly sliced and sauteed in olive oil, then add crispy shallots
Sweet potato baked with savory spice and a thin meringue
Golden beets roasted, sliced, with Neals Yard Stilton, and butter lettuce
Twice baked potato's
Gravy

Bumpkin pie, apple crisp, chocolate cake (there is a birthday girl here, our host)

Oregon wine starting with a good French Champagne in the morning to toast the day and start the cooking.

Except for 2 times, Ive cooked the entire Thankgiving meal since I got married in '98.  This year, I told the wife, Turkey Day is on her this year.......  I havent examined the packages from Balduccis yet but it all looks pretty good.   [puke]
ho hum....

I wouldnt let her "outsource" the turkey.  Currently in the brining bag with a handfull of misc. herbs/spices and sugar.  Might even throw it in the smoker for an hour or two just to give another layer of flavor.

Wanna guess who will be cooking next year??

Oh yea, none of my family is coming to dinner.  All in laws, all the time.  [bang]

Thanksgiving Dinner for 3000 with people I've known for less than 2 weeks in the hot sun.

My appetizer is a bottle of 3olives and some bloody mix. Main course is a ribeye maybe with stuffing, along with a nice 12 pack of Dos Equis for desert.

I Opted to spend the day watchin football and not intrude on anyone else this year ;)
