my basics of my recipe...

took and made my tomato base in a tsock pot with 2 32oz cans of crushed tomatoes and a little 6oz can of paste and added a bundle of thai chili peppers wrapped in cheesecloth( it was just a bit smaller than my fist) and a tablespoon each of powdered garlic and adobo seasoning and a teaspoon of additional kosher salt....let the base simmer for most of Saturday late afternoon/evening....turned off the heat when I went to bed, woke up and ran and came home....turned the heat back on and warmed it up and once warm, removed the bundle of peppers...

I then took 2 cans of red kidney beans and smashed them with the back of  spoon in a mixing bowl, then added it into the base and took my imersion blender and made sure the beans were completely and thoroughly mixed through so as to have it add weight to the sauce without it adding taste...then I added in 2 16oz cans of small chopped tomatoes and added them in to simmer and add just a touch of texture while I prepared the rest...

I took 2 pounds of 90% lean ground beef, and browned it with plenty of smoked paprika and ground dried ancho pepper....strained off the grease and put that in the crock pot...finely diced 1 yellow onion about the size of a baseball and 1 softball sized red bell pepper and put them in the greasefat of the meat and sauteed them to a nice carmelization and then added that whole mixture into the meat and them topped it with the tomato base and stirred and mixed it up and VOILA!

and the 1st place chili was nothing special....she used like a sirloin meat that she crockpotted till it fell apart like a mexican shredded beef and then added in the normal general basics, but she kind of rallies the people around her chili too, which helps her case out...

if I didn't tell you there were beans in it, you wouldn't have known...as they were only used as a thickener for to carry spice across your palette...

there won't be any left by then...I just finished eating a gihugic 24oz serving of it for lunch and there are 3 more sitting in my fridge....
