That's a tough question.
(The question itself isn't. It's just difficult to say which one is my favorite.)

EDC Pocket Caddy by Recycled Firefighter
and Hinderer XM-18 TAD edition
It is a simple pouch made out of recycled fire hose, carries bare minimum EDC items, folder, pen, and flashlight.
Since I don't like using pocket clip, I had to get one.
And it works better than I thought.

Excellent edge stability
Can you see tiny, tiny damge ?
Comapre their size to the scale (the lines are 1mm apart)
They can be easily removed when I sharpen the knife on the stone

Knife Rescue - fixing broken tip of JA Henckle-
The knife is not mine.
The edge I put on is about 20degree per side
(40 degree inclusive)
The steel on these knives are on the softer side.
If you put less than 17 degree per side, the edge
won’t survive that long.

Takamura R2 steel
Santoku (170mm) & Petty (150mm)
So, Hida tool in Berkeley is doing knives in stock 15% off sale right now.
(Until 12/31.)
I picked up these two, Takamura R2 steel santoku and petty.
All in all, they are excellent performer, and very reasonably
priced for what they are.
You get the cutting performance that’s very close to
Shibata Kotetsu knives for about 56 -65% of the cost.
(But, then again, they don’t make long slicers and such.
Also, they don’t make “wa-handle” which I prefer.)
