When I turn my handlebars full left, my rpms go up about 2000 and idle there even if i straighten the bars.  If I turn the bars full right, it drops about 2000rpm (or drops down to 1000rpm).  Throttle cable being pinched?  I don't know how to check.

Most likely yes.  Move steering full left and jigger the cable.  Do you have slack?  Now move it full right and see if you have slack.  It is likely just pinched somewhere.  You could trace the cable and re-tie it as needed.  Alternatively if all else fails, there is a rotatable nut by the handle that can tighten/loosen the cable.

Could also be the fast idle/choke cable as well.

Carbureted or injected?

You can swing the bars while you look at the throttle and fast idle mechanisms on the throttle body.
You should be able to see which one's moving.

1) The correct way - Adjust it with enough slack that the fast idle pulled at maximum will raise your RPM to no more than 2000

2) My way (DO AT YOUR OWN RISK) - adjust it so that the rpm does not shift when you turn the handlebars left or right with the fast idle level full closed. Then tweak it so that the idle is 3500 at maximum open.

I do this so I can have a manual cruise control at low speeds. Keeps me in check when I'm riding through residential areas and allows me to stretch or go handsfree if I deem it safe to do so. Not this only works for speeds at around 25-30mph.

I usually just use it on straights. Not a good idea on turns as the RPMs would change. It comes in handy a lot more than I thought it would.

Regarding (2), I got mine set so I can cruise control at 65mph.  Grin

As EEL, do at your own risk, it requires some thought and care when starting or cruising.

I'm gonna throw out this warning again because this modification is dangerous. You have to remember that if you come across an emergency situation you have to have sense enough to pull the clutch in at the same time as you grab the front brake. Otherwise its like hitting the brake and the accelator at the same time

THIS IS A DANGEROUS MOD....
THIS IS A DANGEROUS MOD....
THIS IS A DANGEROUS MOD....

There...i've said it..my conscience is clear now..

Fast idle is the lower cable.
