I have had the great fortune to purchase an 07' 695 monster with 107 miles on it. My question is do I go ahead and change the belts and fluids because it's been sitting for so long now, or should I go ahead and change the oil and then change the rest of the fluids and belts at the 600 mile checkup?
As far as I know it has been sitting covered in a garage.

Change everything. A couple hundred bucks well worth the piece of mind compared to thousands for a destroyed engine from a belt shredding.

Change it all, especially the belts. Cheap insurance - it's suck to have to write up

New belts
New brake fluid
New engine oil

I'd make sure I took a good long look at the tank as well and inspect for any swelling from old enthanol gas sitting in it.
