where is the kickstand?

the mounting for it is hidden from view currently, but it is there, while the kickstand itself was taken off for weight reduction reasoning.

I've never seen a GP bike up close.

Does Yamaha really machine their cases out of billet?

Not sure about upper cases, but I've seen lower cases that are billet.

Here's a pic from '09, upper and lower cases are billet, cylinder block and head are castings.
