I'm following with interest.  My wife wants to see Italy (I've been many years ago).  My only request if/when we go is the Ducati museum and maybe a rental.  Seems like that might be doable.

I hear you. My wife hasn't seen Italy beyond Rome and wants to see Venice, Florence, Pisa, etc so I figured we tour Chianti at least by Ducati while we are over there. There are quite a few companies doing these bike tours now, so finding one that suits your plans shouldn't be too hard.
