Brisket...

One flat cut brisket. Not just the point cut.

Rub with salt and pepper, and let it reach room temp...cook on a smoker, I use lump charcoal and apple wood, at ~225 until the internal temp is 165. Wrap in foil...double it up...no time to get cheap...and continue cooking until the internal temp is 190-195. Remove from smoker and place in an empty cooler for 2 hours. You can serve it then, or refrigerate and reheat later.

Recipe for the Amazon cupcakes (from Made from Scratch: Daily Bread Bakery & Cafe by Betsy Bott)

Makes 12 jumbo cupcakes, or 2-9" cake pans, or 24-36 small cupcakes--Use cupcake liners or grease and flour pans really well

Filling:
1/2 lb (1-8 oz package) cream cheese (I found Philadelphia gives the best creamy texture)
1/4 cup white sugar
1 egg
1/3 cup whole walnuts (or pieces)
2/3 cup chocolate chips

Beat together cream cheese, sugar, egg, and walnuts (if using pieces, fold in at end with chips) until very smooth.
Stir in chocolate chips just to distribute.

Cake:
2 3/4 cups unbleached or all-purpose flour
1 1/2 cups white sugar
1/2 cup unsweetened cocoa
1 3/4 tsp baking soda
1/3 tsp salt
2 1/4 cup cold water
2/3 cup oil, sunflower or other light variety
2 TBS vinegar, white or cider
1 3/4 tsp vanilla

Preheat oven to 350 F.
Stir together flour, sugar, cocoa, soda, and salt in a large mixing bowl.  Make a well in the center.
In a separate bowl, whisk together water, oil, vinegar, and vanilla.
Pour water mixture into well of dry ingredients.  Beat with whisk or spoon until combined; 25-30 strokes. Will be real soupy, and may have a few lumps.
Fill muffing tins 2/3 full of batter (for small cupcakes a scoop of a 1/3 cup measure works great).
Drop between 1/2 and 1 TBS filling into center of each.  When making cake pans, I just randomly drop the filling throughout the pan.
Bake 35-40 min until cake portion springs back to the touch.  In my convection oven the small cup cakes only take 20-25 min.
Store in air tight container.  Freeze well.
