OK, most of us more than like bacon.  Let's move on to a more controversial food, the often maligned anchovy.  Discretionary use can wake up a recipe,  over use can kill a recipe, yet as a major ingredient they can be scrumptious.  I like them, my wife hates them and refers to them as salty, furry dead fish.

I eat them in Olive oil, right out of the can.

I prefer to use anchovy paste instead of canned anchovies in a bunch of sauces that I make.

As for canned fish... I really like sardines.  I like them canned in tomato sauce or hot mustard, on a some toast.  Such a great cheap and healthy snack.   For some reason they get a bad rap

I like them but not too many at a time.
What would Puttanesca be without use of them?

My ideal summer afternoon snack is a few anchovies, some tasty olives and a glass of Rioja or Sangiovese.
Boquerones (white anchovies) are my favorite.

So, you agree with my wife.  Ellen will consume food with anchovies in it as long as she cannot recognize them.  She used to put up with them untill I served her a bagel with anchovy butter on it.

Looks yummy.  There is indeed a whole world of anchovy out there besides the canned variety.
