today's recipe is for 2:
sliced sourdough bread
roma tomatoes
thinly sliced mushrooms
avacado
eggs
colby jack cheese
fresh ground breakfast sausage (hot cajun was today's flavor)
grill up the sausage into patties
saute the mushrooms with garlic salt, EVOO, pepper, and whatever other spices you feel necessary
fry the eggs
toast the bread and melt the cheese

This is a recipe for awesome teriyaki chicken. A Hawaiian friend of mine taught me how to make it. it's not the kind of teriyaki from a store-bought marinade. It tastes like the kind you get at your local teriyaki bowl restaurant.
Ingredients:
3-4 lbs boneless skinless chicken thighs (serves 4-6)
3-4 cups white rice. Hinode brand is tasty. :)
Sauce ingredients:
1 part soy sauce. Aloha brand (not just saying hello ;) )
1 part cheap beer. Coors, Bud, Heiny!!! [cheeky]
1 part sugar. (plain white)
Optional sauce ingredients:
1 garlic clove chopped finely.
A little bit of fresh ginger, chopped finely or a dash or two of powdered ginger works really well also.
Sesame seeds. (they add a very subtle flavor)
Preparation: take the chicken thighs and remove as much of the fat as you can. Tenderize the chicken if you like. Set chicken aside.
Sauce preparation: in a small saucepan, add the soy, beer, and sugar as well as the optional ingredients that you like. Bring to a boil. Lower heat slightly, and stir mixture occasionally for 10 minutes. Let sauce cool for five minutes.
Next in a large bowl, add the chicken and the teriyaki mixture, just covering the chicken, so you can save save about 1 cup or more of sauce for glaze and to drizzle on your rice/veggies. Let chicken marinate for at least one hour, but preferably overnight. The longer the chicken marinates the better the teriyaki flavor.
Glaze preparation: take the remaining teriyaki sauce, about 1 cup, and bring to medium or medium/high heat. Add in about 1-1 1/2 tablespoons of water/cornstarch mixture. Continue to heat, about five minutes until thickened. Can be kept for a week or so in the fridge.
Prepare rice shortly before serving. You can also steam some broccoli and carrots to go on top of the rice and chicken.
Cooking: heat grill to medium or slightly lower heat. Put all of your chicken on at once. Let chicken sear on one side for about 30-40 seconds and then turn over and sear the other side. Continue to cook, turning frequently. Be careful that the chicken does not char around the edges. Cook for about 15 minutes. Take a small amount of your glaze and hit the chicken with it just before you take it off the grill. You'll know the chicken is done when you get a nice, dark, brown color. Think [bacon]. [thumbsup]
Take cooked chicken and chop up into half-inch cubes, serve on top of rice with veggies and drizzle with a little more sauce and you're done.
Serve with an ice cold beer and enjoy. [beer]
BTW: you WILL be the Chicken God [bow_down] after making this at your next BBQ!
notes: most items you can buy in bulk at Costco or Sam's Club. We like to use Aloha brand soy sauce, because it's less salty than Kikoman and we can get it locally in Kona. Buy it by the gallon, because it's cheaper and once you try this recipe, you'll want to make it all the time. Don't waste your money using expensive beer, you can't taste the difference anyways. You can use mirin or cooking sherry, but again, there is only a small difference in flavor, but costs much more to make it that way. Using plain, refined sugar, has the best flavor, believe it or not. You can use brown sugar or cane sugar, but the flavor isn't the same. So if you prefer those experiment and see what you think.

Those things are called "cooking". Sheesh!
Tonight I had a frozen veggie burrito (heated in the hotel room microwave), and some fruit. Howzzat?

Rice + instant curry (House brand ;D) + chicken nuggets (must be ovened/ toast ovened).
If you can find the right chicken nuggets it's almost like getting chicken katsu curry. :D

I predict that will be a delicious, if maybe slightly hard to cook, combination.
My own personal bachelor chow favorite is probably an easy version of eggplant parm.
Slice up the eggplant, beer batter (flour, salt, pepper, 2-3 eggs, mix in a bowl and add beer until just runnier than oatmeal) the slices, and fry it up. Top it with shredded mozz and some home-made marinara.
I make the sauce in batches and freeze it in whatever plastic containers I have lying around. Cool Whip, butter, sour cream, anything resealable. Then I put a container at a time in the fridge to use.
okay...here's one for you.
boneless chicken breast....slice about 2/3 to 3/4 of the way through the middle (so it's stuff-able).
inside, place some butter and instant mashed potato powder. (spice acordingly with whatever you want....I used a all purpose BBQ seasoning)
fold chicken back over and then roll bacon slices around chicken to hold it together. Keep them in place with toothpicks. chicken should be completely surrounded by bacon.
place on Grill and brush on a little BBQ sauce on either side when you flip it.
MMMMMMM tasty!

Many people not living on the west coast have no Idea what sourdough is. When I had to live in New Orleans I would ask all over the place "where can I get some sourdough bread" The answer was usually like "What kind ob bread"? Or "sower who"? So french bread usually had to do. I did find one store that would carry a few loaves a week. Francisco brand sourdough would come in on Tuesday, and be gone by that afternoon. I guess it starts to mold within a few days in that heat.
Tonight I grilled some shrimp with a little olive oil and italian spices. (set them aside) I stir fried some
kalmata olives, sundried tomatoes, artichoke hearts and capers. Made some angel hair pasta, and put
it all together. Fresh grated parmigiano reggiano.
For dessert I had a scoop of vanilla Haagen-Daz, along with a scoop of cranberry/blueberry sorbet. Fresh raspberries
and blackberries, dusted with dark chocolate, along with a chilled shot of Patron.
Too fancy for this thread.
Come back when you've chopped up hot pockets and mixed with pasta.

Still not bachelor chow. Too good. Maybe if they were prefried fast food shrimp leftover in some jarred tomato sauce over pasta, or, better yet, added to Spaghetti Os.

Replace beef tenderloins with Cube steak, Salad from a Bag with peanuts on top, and cheddar cheese. You can have good beer of your choice to drink.

Brought the tenderloin to room temperature, rubbed it with a little evoo, kosher salt and cracked pepper. Asparagus went on the grill same way. Seared the tenderloin on the side burner, then let it come back to room temp. Then in the pan 5min on each side. Covered in foil to rest. Put the salad together, then plated everything. Medium rare to perfection.
Dessert was vanilla ice cream and mango sorbet, dusted with dark chocolate. Shot of chilled Patron.
"Homeowner's Special": a can of chicken corn chowder soup dumped on a bed of couscous. Less than 10 minutes start-to-finish. Now that's good eatin'. Compliment with the cheap beer of your choice, unless the payment was due this week- then substitute tap water.
