I get to travel a few times a year to my office in Atlanta. I get a break from the kids at that time, even though I'm spend most of my time at the office, so no hooker midgets for me. I do get to go hunting with my brother and we sit around the cabin that he rents and have some beer. I also consider trackday weekends manly days sanz family.

iron skillet, well seasoned.  if you don't know what seasoning an iron skillet means, look it up.

I use a spritz of olive oil cooking spray.  spray when cold, let it settle, then turn the heat on high.
rub a pinch of salt into both sides.. let it sit on the counter until its room temp.  don't cook it when it's cold.
when the skillet is hot enough the oil will barely be smoking.  it will just start to burn.
put the steak on. 
black & blue takes about a minute or less per side.  If the skillet is hot enough, it will be slightly charred on the outside and cooked well done about a millimeter into the steak.

well done thru is about 4-5 minutes per side. 

I like a porterhouse medium well  -- about 2-3 min per side.

i once had a 16 oz porterhouse black & blue, i think it took me a month to get that out of my system.

tonight i am going to marinate some strip steak.

Yes, I know what marinating an iron skillet is and how to care for it......I just don't own one  [laugh] [laugh]

Thanks for the tip, I might have to procure one now. I've been researching one for a while and will probably get one this fall so I can have good meat cooking in the winter instead of freezing my ass off in 5 degree weather on the grill (yes, I do this)

If you want a really really good Flank Stead sandwich recipe, let me know and I will PM it to you.

Because you are my big brother, I will share it with you..........but it is a family recipe like Italians hold their spaghetti sauce.

(It was actually the featured recipe in a Good Housekeeping or Sunset Magazine from the early 60's.......or my Aunt came up with it....who knows)

A cast-iron pan is the absolute best way to cook a filet IMO. Any bone in steak, or really fatty cut, is better on the grill (IMO of course).

Peanut oil is better than Olive...it has a higher smoke point, so you won't smoke up your house as bad. If you have a kick-ass hood, then maybe not as big of a concern...mine sucks though.  [laugh] I also only apply the oil to the meat itself, not the pan.

I don't like rare steak so much...prefer medium to medium rare. I find this hard to get on the stove alone without buring the outside of the steak, so I usually cook like 'Tiz said on one side for about 2 minutes, or until a decent crust is formed. Then flip and immediately throw the pan into a 350* oven for about 6-8 minutes, depending upon steak size. It always gives a nice crust on both sides, as well as a nice pink center.  [thumbsup]

The other benefit to cooking steaks this way is the pan is ready to make a killer pan sauce. De-glaze with some chicken stock, then add some Tequila (or whatever you want), pepper, thyme, and a bit of milk (or cream). Reduce to about a couple tablespoons. Good stuff!  [thumbsup]

...and don't worry. All men like some "me" time, even Randy I'm sure. Doesn't mean we don't want to be married, just that we like to be alone to relax every so often.  :)
