On my old GL1000 I used to take a screwdriver and set the idle high and use it at cruise control -- while moving.
That freed up hands so I could do things such as, eat a hamburger, smoke, drink a beverage, or lay down.

It's not the fact he is riding one handed, heck the ERC has you ride one handed weaving through cones. It's more the point of him watching the screen and paying more attention to the camera than watching the road.
