I fried up some pancetta last night, and... it is better than bacon.  I'm sorry, but it is.

Pancetta is still bacon...or a form of it.  [thumbsup]

Usually I prefer Pancetta of Proscuitto to bacon...but sometimes bacon is what is needed.

You BBQ? (IIRC you're a fan of the Alton Brown method of putting the steak directly on the coals)

Huh...I could have sworn you mentioned that a long time ago (DML). He uses lump charcoal, blows off the ashes when the coals are ready, then places the meat directly onto the coals (using flank steak)...super hot, nice sear, zero flair-ups due to the lack of oxygen so no burnt meat. I've never tried it, but I have yet to try one of his ideas that wasn't awesome.

Anyway...any char on BBQ'ed meat is also a known carcinogen.
