I dont like the look of my dual exhaust on my 02 750, was thinking of bringing it to an exhaust shop and making it into a 1 sided exhaust (right hand side) not sure if this would screw with the motor so I wanted to get feedback before doing so. opinions?

They offer 2-1 exhaust setups for the Monster, so I doubt that the concept is harmful... though I doubt that a single stock can has appropriate interior volume to handle the motor. Coring the remaining can may help, but I'd imagine that you'd need to do some other improvements on the intake, or PCIII if applicable, to make the system balance again.

The aftermarket 2-1 cans seem to be larger diameter than the stock ones.
