The RRW mentioned some software named RaceRender (http://www.racerender.com/) that combines data acquisition with video, but I'm looking into something called DashWare (http://www.dashware.net/) that looks even better.

I can just see using an app like that, only to have Verizon interrupt a kick ass lap by texting you mistargeted ads for NASCAR...

Hell, even some cars know you're on a racetrack. Apparently the speed governor on many supercars will shut off if the built in GPS detects you're at a racetrack...
