1999 Monster 750 Crankcase leak.

I have quite an oil leak that's coming from the left side crankcase cover. It's leaking a fair bit of oil into the front sprocket, and I'm constantly cleaning the bike because of it, plus the driveway now has large oil spots all over it. It only leaks a couple drops on the ground after the bike has been running for a bit.

I was about to pull the crankcase cover and replace the factory gasket with one I purchased from CA cycleworks.com but was concerned about pulling the clutch slave cylinder off. If I pull the clutch slave cylinder off will I need to bleed the system? Because If I do I'll just take it to a trained mechanic.  I do have a bit of experience working on cars, as well I have a couple mechanic friends that could help me too.

Just removing the slave does not require bleeding unless the line is removed.  Are you sure it is the sidecover?  It could be the O rings around the cluch pushrod or the slave that are leaking.  Clean the area carefully and check again.
