Originally I was thinking just US, as the numbers are less obviously informative, and not explained by official documentation (that I've found).

euro # are different, and all follow the same style from 1989 onwards.
first three letters just mean ducati.
then comes capacity in cc. there are a few variations to this. 400 are 398cc, but have 400, 600 are 583cc, but have 600, 906 paso have 906 for 900 6 speed.
then cooling, Air or Water
then # of valves per cylinder
then variant
then engine number in sequence, 6 digits.

So on the US models the 3rd number is the displacement and 4th is the year it was built.
As Nick has posted the dates are the same as the vin so prior to 2001 you have a letter for the year. from 2001 onward you have the year (number).
3rd number does not seem to matter if it is a monster or a supersport, they are only concerned with displacement.
900 = 4
996 = 5
750 = 3 (note a 748 is the same as a 750 2 valve as they both are 748cc)
620 = 2
800 = A
851 = 6
916 = 8
1000 = B (should be both 2 and 3 valve)
695 = D
My 650 has a completely different engine number and the ducati engine in the grand canyon has a non-US type engine number ZDM*****
Good for finding out if that 996 cases are a 748 or a 996, though you have to watch out still as I have a 900 that is an 853 and a 620 that may soon be a 795 and a 695 that could easily become an 800. I have also built 916 cases into an 851 and 748's into 916's.

Just noticed my new trackday cases engine VIN starts with H74
Should be 900 cc engine by what we have found right?
Sorry it is a 748R
So maybe the trend is only for standard production cases.
Oh and the 851 cases I have start with HB6

I know you already have this info in the table, but here is mine anyway:
2001 M900Sie. Fourth owner; I know the third didn't swap the engine but can't speak for other two. That said, nothing in maintenance records I inherited suggest a swap.
