I just bought a 2009 M1100 and can't figure out the on board computer, how do I get to Trip and Fuel level (most important), and the rest?

Welcome to the forum. I can't tell you exactly, as I don't own that bike, but you can go here to download the manual for your specific bike:
http://www.ducatiusa.com/services/maintenance/index.do
Page 11 starts into the LCD functions. Congrats on the new purchase

I have an 1100evo, and I cant be sure, but I believe the computer is basically the same - as far as I know there is no fuel level indicator, however once the idiot light comes on on my bike, the odo changes to a low fuel trip distance letting me know how far I've traveled since the light came on. hope that helps
