Check out the track days section of
www.cosportbikeclub.org if you've not already. One of the members (Scott aka RYBO) is working on putting together a track day service that will provide instruction, corner workers, medical response svc, etc.
IMI is a good starter track and is cheap. It's very small and technical, but you can have a good time getting used to the track and being passed by faster riders, etc.
To ride Pueblo you need to have passed a qualified track school. One of the members of CSC also holds these at the club track days for a reasonable charge.
