HERE IS ONE:

3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz light rum
club soda

In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. Add rum and mix. Top off with *chilled* club soda (or seltzer). Add a lime slice and the remaining mint, and serve.

...remember, the sugar HAS to be the raw, brown one!!!

I prefer simple syrup to adding direct sugar.  Also, try replacing the rum with tequila.

I'm a fan of Raspberry Mojitos

- 6 oz Cruzan light rum
- 4 oz simple syrup
- 6 lime halves
- handful of raspberries
- 30 - 40 sprigs of fresh mint leaves
- club soda

Build in mixing pitcher. Press 6 lime halves and simple syrup. Add rum, mint leaves, raspberries, crush, fill with ice. Stir and top with club soda.

Muddle a little fresh ginger root in the rum before pouring it in the drink.

Guinness is great, but a mojito is just so refreshing on a crushingly humid afternoon.  There is something about the combo of lime and mint that is fantastic.

If you are ever in the Portland Or. area go to Edgefield and get one there.  They have a killer mojito that has gotten me hooked on them.  Try adding the juice from a watermelon, thats not a bad twist to throw in.  Also fresh mint is always better than the stuff from the store.  Sorry I don't have a recipe for you, I'm still working to perfect one.  Well, I should get back to that research.....   ;D
